Tropical Rain

Tropical rain is just magical. It rained all last night starting from when we were out for dinner on the beach. We all sat up at the bar at Coco Gardens making new friends and having a few sneaky cocktails. The rain continued all through the night and the sound of it on the roof was so comforting. The rain stopped when I was having breakfast on the beach and all day it’s been overcast. It looks surreal and I just wanted to share this little bit of magic with you. x

Exploring Koh Phgangan by moped

What an incredible day this was. Breakfast on the beach at Coco Gardens where I’m staying followed by exploring the local area on the mopeds. We swam in waterfalls, stopped off at random beautiful beaches, ate lunch on the beach, found random tire swings and watched the sunset from Amsterdam Bar. I’m really appreciating my time here. I definitely needed a break and a bit of a holiday! Now to create a life that I don’t need a break from…

Beaches and tire swings

Loving being back in Koh Phangan again. We took the mopeds out for the day and discovered this little gem of a beach and this fabulous tire swing. It’s a much different experience from my last trip that’s for sure!

Arriving in Thailand

So I’m in Thailand! It was an absolutely exhausting trip but well worth it. I don’t know if I was just in beautiful state of mind knowing that I was heading off to Thailand to start my adventure but everything was just so beautiful. The clouds out the window of the plane looked like magical mountains. The lightening off in the distance was out of this world and then when I got on my early morning flight to Surat Thani I got to enjoy this divine sunrise. Life is wonderful.

Family Christmas Fun

I’m sure others have tried to claim it before but I’m certain that I have the most incredible family in the whole wide world!

We’ve just had our annual Christmas party as we always do in early December. We all head away for the weekend to a location chosen by the family who organise it for that year. This year we stayed in a family caravan park in country victoria on the river. We play volleyball, three legged races, sack races, tug-of-war, tunnel ball… and this year we added beer pong to the list.

What sets this ridiculous mob apart from the rest is the fact that we’re all such incredible friends. Regardless of age or interests we are all friends and have so much love for each other. I couldn’t think of a better group of people to spend my last night in Australia with.

The morning after the party we had a big hangover cure breakfast and then it was time for me to leave for the airport. I feel so so blessed.

Healthy “Snickers” Mousse

INGREDIENTS:

  • 1 x frozen ripe banana
  • 1 x ripe banana (not frozen)
  • 1 heaped tablespoon of peanut butter (I use the organic peanut butter from my local market)
  • 2 teaspoons of raw organic cacao
  • 3 chopped dates with pips removed
  • dash of coconut water
  • Loving Earth caramelised buckinis

METHOD :

  1. place the bananas, peanut butter, cacao and dates in a high powered blender or food processor and pour a small amount of coconut water over the top,
  2. blend and add more coconut water until you get the desired consistency.
  3. Spoon the mousse into small glasses and top with buckinis.
  4. Enjoy!

TIP: using frozen bananas allows you to enjoy this tasty treat straight away. If you dont have any frozen bananas or you’re pre-preparing for later you can just use unfrozen ripe bananas and leave the mousse to chill in the fridge for a while. Make sure to only add the buckinis just before you serve them so they stay crunchy and delicious.
